Taking what was learnt from the five different fermentations used in the previous vintage, 2021 called for a more refined approach, to develop this end result.

Recognising the strengths of each ferment, then enhancing those characters by manipulating ferment temperatures, in addition to various maceration techniques — this is our most evolved version of what was one of our first wines on offer.

Looking to the past, yet leaning into a technically developed approach moving forward, it’s a more refined release from its predecessor.
