Working again with David Hamilton’s Kuitpo Vineyard, the goal was to further pursue a more structural, mature direction. Multiple methods were used, to enhance the complexities. Deeper research and experimentation with temperature, created confectionary or savoury characteristics within the wine.
Half whole berry fermented, slow and cooler, capturing vibrancy and brightness.
The other half, whole bunch fermented, quick and as hot as possible. This built structure and developed savouriness. All matured in seasoned oak, nested on fine lees.
Complex and considered. One to drink now, or give it some time and unfold it in the future.
