A first for Moorak, using fruit from Kangaroo Island, dry-grown for over 15 years, using organic practices.

Beautifully balanced, typically fresh but with complexities produced by it’s two part processing. Firstly, through carbonic maceration, pushed bright- ness and confectionary. With the second part, a week on skins, added it’s crunch and texture.

It’s multilayered, with a fleck of reduction for stability and intrigue. A welcome opportunity to use more regional fruit, to produce an original wine from the Island.
