This is our first take on a sparkling wine, using the Ancestral Method. Basically hitting the sweet spot of fermentation prior to bottling (no adding back sugar or juice).
Made with the full treatment — cold settling and cold stabilisation to avoid gushing, disgorged for a safe bet. It was also carbonic macerated for 5 days to push the aromatics and vibrancy.
Requiring a lot more attention, this process is arduous, but the wine presents in its purest and freshest form.
