Chardonnay is incredibly versatile. This was one of the main reasons for producing four different styles from the 2021 vintage. From the high quality of the Carey Gully fruit, the direction was a richer, reductive and textural Chardonnay style.

Whole bunch pressed to ferment in steel through primary, cold. Half was racked to a new François Ferres Puncheon. The remaining left on full solids in tank. Both through full malolactic. Once matured, they were blended back together prior to bottling.

The outcome is smokey, flinty and aromatically intense. Alongside richness, texture, and a sharp line of acidity.
