Moorak’s first traditional method sparkling Chardonnay, built through wild yeast fermentation, without any finings or additions other than sulphur during disgorging.

The 2022 base Chardonnay from Glendhu Vineyard in Carey Gully was cold fermented in stainless steel, then racked to seasoned barriques to spend 12 months on fine lees. The 2023 vintage free run was blended in as triage for secondary fermentation in bottle. Bottled May 2023 and disgorged by hand in-house January 2024.

The result- gentle beading in the glass, with generous aromatics of pear and straw. A broad texture, stemming from full malo and maturation on fine lees in seasoned oak, Extra Brut finish.
All creating a distinctive and memorable wine.
