Ancestral Cuvee 23’

Peacock Vineyard

Oakbank, Adelaide Hills

Moorak’s first disgorged ancestral method sparkling cuvée, of Chardonnay (2/3) and Pinot Meunier (1/3). Built through wild yeast fermentation, without any finings or additions other than sulphur at disgorging.

Both handpicked and whole bunch pressed, with the Meunier undergoing a brief cold soak for intensity and depth. Co-fermented in stainless steel, bottled in May 2023, and hand-disgorged in-house in January 2024.

The result- blushing hue with generous mousse and bead in the glass. Vibrant aromatics of strawberry and cherry, all tied with aplenty texture from a Brut finish.
